Queso Menonita

Menonita is a semi-soft, mild Mexican cheese that melts beautifully. It's perfect for grating into quesadillas, queso fundido, and on top of nachos and enchiladas.

Although it's a Mexican cheese, don't limit it to Mexican dishes! With its superior melting qualities and mild flavor, it would be an excellent choice for grilled cheese, fondue, or mac and cheese!

Queso Fundido con Chorizo

Ingredients

•1/2 lb bulk chorizo

•1 lb queso menonita

•Serve with salsa, tortilla chips or warmed tortilla chips

•Garnish with cilantro, and/or diced tomatoes       

Directions

•Preheat oven to 400 degrees.  

•In medium skillet, cook 1/2 pound of crumbled chorizo until browned. While chorizo is cooking, shred one pound of Queso Menonita.

•Once chorizo is fully cooked, remove the excess fat by draining chorizo on a paper towel.

•Serve with salsa, tortilla chips, warmed tortillas or whatever your heart desires. You can also top your queso fundido with chopped cilantro, diced tomatoes or green onions. Vegetarian? No problem! Swap out the chorizo for vegetables sauteed with a pinch of chili powder and cumin.
