Jeff's Hot Mussels in White Wine Sauce

Serves 4

This meal will make you feel like you are dining on the west coast.  Simple yet elegant and incredibly flavorful.  Serve with french bread or noodles.

 

 


Ingredients:

•2 lbs mussels

•2 tbsp unsalted butter

•2 cloves garlic, minced

•1 lemon, zested

•2 cups white wine

•black pepper – to taste

•salt – to taste

•1 tbsp all-purpose flour

•1 cup parsley

 

Directions:

• Melt butter in a large sauce pan over medium-low heat. Add minced garlic and continue to cook for one minute. Reduce heat to low and add flour and make a roux.
• Add wine, lemon zest salt and black pepper. Cook over medium low heat and allow the sauce to thicken, stirring constantly – about 3 minutes.
• When sauce begins to bubble, add mussels and cover. The mussels will be done when they have opened – takes 3-5 minutes.
• Add parsley, toss, and serve.
• Serve with grilled bread and lemon wedges to garnish.
