Pumpkin Kale Pizza

Serves 4

Pizza is always delicious, and it's even better with this fall twist! This recipe combines pumpkin puree with italian herbs to make the sauce. Topped with fall vegetables, this is sure to be a seasonal hit! 

Supplement fresh herbs if you have them or try making your own pizza crust instead of purchasing a premade one. 


Ingredients 

1 premade crust

For the sauce

1 and 1/2 cup pumpkin puree

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon dried oregano 

1 teaspoon sea salt 

1 tablespoon olive oil

1 clove crushed garlic

For the toppings

1 tablespoon coconut oil (for sauteeing veggies)

1/2 cup sliced mushrooms

1/4 cup diced onions

1and 1/2 cup fresh kale

1/4 cup ground sausage (optional)

Cheese of choice. Feta, parmesan, goat cheese and fresh mozerella are all delicious options. 

Directions

• Preheat oven to 425 degrees.

• Saute sliced mushrooms, onions, greens, and sausage until sausage is cooked fully and all other ingredients are soft. Set aside.

• Combine pumpkin puree, rosemary, thyme, oregano, sea salt, olive oil and crushed garlic in a bowl. Spread evenly over premade crust.

• Spread sauteed ingredients over pizza evently. Add cheese. 

• Bake pizza until crust is crispy around the edges and cheese is melted. Enjoy!
