Rhubarb Barbeque Sauce


Makes 2 pint BBQ sauce

Cooking Time 40 minutes

A savory and delicious way to use fresh rhubarb from your garden or the farmer's market.  Can now and enjoy all year round.  this is sure to be a family pleaser.  Perfect for grilling.

Ingredients:

 • 5-7 cups rhubarb, chopped

• 1/2 medium yellow onion
• 1 red bell pepper
• 1 clove garlic, minced
• 1 cup sugar (or substitute 3/4 cup honey or agave nectar)
• 1/2 cup apple cider vinegar
• 1-2 tsp crushed red chilies, or to taste
• 1 1/2 tsp ground mustard
• 1 tsp coarse salt

Directions:

• Roughly chop the rhubarb, onion, and bell pepper.  Combine all sauce ingredients into large pot or slow cooker.

• If using slow cooker:  Lowest setting overnight. If using pot:  Medium-high heat until boiling, cover and reduce heat to barely a simmer, cook for 30-45 minutes until veggies are softened.
•Using an immersion blender (or working in batches to transfer to a stand blender), puree sauce until smooth and thick.  If sauce remains too thin after pureeing, return to heat and cook until sauce reaches desired consistency.
