Summer Dessert: Fresh Cheese

Pairing fresh cheeses like Mascarpone and Hand-Dipped Ricotta with seasonal fruit is a low maintenance and healthier dessert option. Whip up this easy, satisfying dessert that won't send you into the evening filled with pie-crust, cookies or processed sugar.


The Cheese:

•1 Cup Fresh Ricotta, Mascarpone or Goat Cheese 

•1 tbsp honey, or maple syrup

The Fruit:

Peaches, nectarines, figs, mangos, kiwi, melon, banana, stewed rhubarb, strawberries and blackberries are all delicious topped with sweetened, whipped fresh cheese.

Directions:

•To prepare cheese, add honey or maple syrup to cheese of your choosing and whip with a fork. Feel free to use more or less sweetener to your particular taste. For an extra fulffy Mascarpone, use an electric mixer.

•To further impress, add a tablespoon of orange or lemon zest, grated ginger, finely chopped mint or basil to the cheese before whipping.

•You can either stop here and top fruit of your choosing with a dollop of prepared sweetened cheese, and serve. 

•You can also experiment with lightly cooking your fruits. Peaches (or any stone fruit), fresh (but firmer) figs, pineapple and mangos take to a hot grill or pan beautifully. Just brush lightly with olive oil, and grill flesh side down, just long enough to see a nice carmelized crust beginning to form. Remove from heat and serve topped with your prepared sweetened cheese, enjoy!
