Blueberry Lemon Popsicles

Makes 6 popsicles

These healthy popsicles are the perfect treat, cool off without  the guilt of sugar heavy frozen treats! Try with greek yogurt for an extra protein boost, or easily make vegan by using coconut or soy yogurt!


Ingredients

•1/2 cup blueberries

•zest of 1 lemon

•1 cup vanilla yogurt (alternately, you can use plain yogurt and add vanilla extract and sweetener if desired)

Directions

•Purée blueberries in blender or food processor with lemon zest. Add in a splash of water if you're having trouble mixing.

•Alternate adding yogurt and puréed blueberries into popsicle molds until full.

•Cover and add sticks according to instructions for your popsicle mold and freeze for atleast 6 hours, or overnight.
