Recipe adpated from King Arthur Flour

Ingredients

•3 1/2 cups Unbleached All-Purpose Flour
•2 tsp instant yeast
•2 tbsp potato flour
•3 tbsp nonfat dry milk
•2 tbsp sugar
•1 1/2 tsp salt
•4 tbsp softened butter
•2/3 cup hot water
•1/2 cup cold milk

Directions

•In a large bowl, mix together hot water and cold milk to form a lukewarm liquid. Dump yeast into mixture and stir until dissolved.

•Add in additional ingredients, mix and knead. You can use your hands, a stand mixer or a bread machine set on dough cycle. The resulting dough should be soft and smooth.

•Place the dough in a lightly greased container, large enough for dough to double in size. Cover and allow to rise for 1 - 1 1/2 hours, until it's just about doubled.

•Gently deflate the dough, and transfer it to clean work surface.

•Divide the dough into 24 equal pieces, and round each into a smooth ball using the palm of your hand, cupped.

•Lightly grease a 9" x 13" pan, and place the rolls in 4 rows of 6 buns.

•Cover the pan, and allow the buns to rise until they're crowded against one another and quite puffy, another 1 - 1 1/2 hours. Towards the end of the rising time, preheat the oven to 350°F.

•Uncover the buns, and bake for 22 to 24 minutes, until they're golden brown on top and the edges of the center bun spring back lightly when you touch it.

•Remove the buns from the oven, and brush with an extra tablespoon of butter. Let them cool for a minute or two, and then turn them out onto a plate or platter.
