Grilled Chicken with Blueberry BBQ Sauce

Makes 20 chicken drumsticks

A delicious mix of sweet and spicy, this marinade may become a grilling season staple.

Ingredients

•20 chicken drumsticks

•Kosher salt and pepper, to taste

•2 tablespoons olive oil

•1 cup onion, diced

•1 clove garlic, minced

•2 tsp grated ginger

•1 lemongrass stalk (bottom third only, tough outer layers removed), finely chopped

•1 tsp chili paste

•2-1/2 cups blueberries (on sale this week!) 

•4 tablespoons honey

•1 tablespoon balsamic vinegar

•1 lime, zested

Directions

•Preheat your grill to medium heat and season wings lightly with kosher salt and pepper, set aside.

•In a skillet set over medium-high heat add olive oil. Once the oil is hot add in the onion and cook until soft. Add in the garlic, grated ginger, chopped lemongrass, chile paste and saute for another minute just until fragrant.

•Add in the wild blueberries, honey, balsamic vinegar and lime zest. Cook until the berries just begin to soften and release their juice.

•Add ingredients from the skillet to a blender or food processor and carefully puree until smooth.

•Add the pureed mixture back to skillet and cook over medium heat until thick and reaches your desired texture. Season with kosher salt and pepper, to taste.

•Add the wings to the grill and cook for about 25 minutes until fully cooked, turning half way through. After cooking is complete, baste wings with wild blueberry bbq sauce, turn and continue to baste until desired crispiness and sauce coverage is achieved.
