Massaged Kale Salad

This recipe combines raw kale with a bit of olive oil, tahini, a splash of lemon juice, and freshly ground pepper for a refreshing salad. A perfect, sesonal compliment to a hearty meal. Easy to make and beautiful to look at!

Ingredients
Dressing:
•2 tbsp tahini
•1 lemon, juiced
•1 clove garlic, crushed
•1 tbsp olive oil
•Salt & Pepper to taste
Salad:
•1 bunch kale, rinsed & chopped
•1 apple, thinly sliced
•2 carrots, thinly sliced
•1 cucumber, thinly sliced
•3 tbsp pumpkin seeds, toasted
Directions
•In a small bowl, mix together the ingredients for the dressing.
•In your salad bowl, lightly massage the dressing into the kale. When kale is soft, mix in the apple, cucumber and carrots. Top with the pumpkin seeds. Add chevre cheese, if desired.
