Sweet or Salty Pumpkin Seeds

Roasted pumpkin seeds are a true sign of the holiday season. They hold fun memories of carving pumpkins and when eaten, provide a sense of calm and nostalgia.

Roasted pumpkin seeds are a perfect snack on their own, as a topping for soup, pizza, pasta, or even ice cream! 

The easiest way to remove the pulp from pumpkin seeds is to soak them in water to separate the strings from the seeds. 


Sweet Pumpkin Seeds

Cinnamon Sugar

• Preheat the oven to 275 degrees

• In a bowl, combine 1 tablespoon of coconut oil per 1 cup of pumpkin seeds. Mix until seeds are evenly coated. 

• In a separate bowl, combine 1/4 cup brown sugar with 2 teaspoons of cinnamon. 

• Add sugar mixture to seeds and mix until seeds are evenly coated.

• Spread seeds evenly on a parchment lined baking sheet and bake for 20 minutes, or until seeds are crispy and golden brown. 

Savory Pumpkin Seeds 

Rosemary Parmesan 

• Preheat the oven to 275 degrees

• In a bowl, combine 1 tablespoon of olive oil per 1 cup of pumpkin seeds. Mix until seeds are evenly coated. 

• In a separate bowl, combine 2 tablespoons grated parmesan, 1 tablespoon dried rosemary, 2 teaspoons sea salt, and 1 teaspoon of cayenne (optional). 

• Add seasoning mixture to seeds and mix until seeds are evenly coated.

• Spread seeds evenly on a parchment lined baking sheet and bake for 20 minutes, or until seeds are crispy and golden brown.
