Sweet Potato Smoothie

You'll think you're having Thanksgiving dessert with this seemingly indulgent smoothie, which is actually pretty healthy and makes a great breakfast, or last night snack!

 Vegan, Gluten-Free


Ingredients

1 medium sweet potato, cooked, peeled and cubed

1 medium banana

2 cups of almond milk, or non-dairy milk of choice

2 tbsp maple syrup

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1 tsp vanilla extract

Handful walnuts or pecans

Handful of spinach

A few ice cubes (or, simply freeze your banana and sweet potato prior to making!)

Directions

•Combine all ingredients in a blender, blend until smooth and creamy. Pour into 2-3 tall glasses and enjoy!


Feel free to adjust the amount of liquid based on your personal preference. Less liquid will make a thicker smoothie, more liquid will thin it out.
