Green Circle Chicken

D' Artagnan is on a mission to educate consumers about the importance of understanding and appreciating how food is raised and harvested.  They are passionate about the quality of their products and dedicated to the purest sourcing methods. The proof of the caliber of their artisanal chicken is evidenced in the fact that four star restaurants in New York City use their chicken exclusively.  Meaning that you can purchase and cook the same chicken you would get at notable, awarded restaurants like Per Se, Daniel and Gramercy Tavern. 

D'Artagnan has offered their organic, free range chicken since well before the USDA had an official organic certification program.  The most unique characteristic of their birds: Green Circle chickens are fed a 100% vegetable diet.  These are not just any vegetables either, they are the scraps from the same acclaimed restaurants that serve these birds and where the best ingredients are used.

Duck Breasts and Fat

D’Artagnan offers a wide range of duck products, as well.  Their traditional and humane methods of duck farming allow them to produce the finest duck on the market today.  Here is a brief description of the varieties they carry: 

Rohan

A proprietary hybrid of several duck breeds including the heritage Mallard and the Pekin, raised on a farm in New York.  These ducks are raised cage-free, and are never given antibiotics, hormones, or steroids. Living in open barns with plenty of space and sunlight, the ducks eat a vegetarian diet of corn, soy and fresh, clean water.  The ducks are hand-processed and the superior air-chilling process means that the ducks do not retain water, which can affect texture, taste and weight.

Moulard 

A large hybrid duck, with a plump breast and hefty legs, makes it a favorite of chefs and home cooks.  Raised to exact specifications in free-range barns, their Moulard ducks eat a wholesome grain diet without added antibiotics.

Muscovy

A connoisseur's duck offering a thin skin and richly-flavored, dark-red meat. D'Artagnan's Muscovy ducks come from farmers who use traditional methods and allow the ducks to grow to full maturity in open barns, without any hormones or antibiotics. This duck's meat has less fat and less calories per pound than turkey, so they render out less fat in cooking, creating a flavorful and healthy eating experience.

Pekin

The most common domestic duck, sourced from well-established family farms dedicated to humane farming traditions while incorporating the most advanced modern techniques.  Known for its mild, satisfying flavor that easily adapts to a number of cuisine and menu categories. It has lighter flesh and milder flavor than Moulard or Muscovy duck, and is considered a perfect duck for whole roasting.
